Well time seems to be going so fast that I can not believe it. April is here and we are celebrating Easter. What a beautiful day the sun is here in Springville. So I love SPRING.
It has been awhile since I have written. I do know how greatful I am that we here on Earth have the knowledge that there is Life after death. How sad it would be with out that knowledge.
So I am starting to cook again. and enjoying it. I am not sure why I go through times that I just do not want to do anything.
So as we enjoy Easter now. Shelly is very lucking to be in Heaven while they celebrate the ressuration of the Saviour.
I will post some recipes again.

The Three
Ok it is another Sunday and it is beautiful here in Springville Utah.
So today I am making
1. Saucy Chicken Thighs, Slow berry cobbler and No-fuss Brown Rice.
So here is the recipe for Saucy Chicken Thighs.
Shelly's baptism Day. The wonderful Sister Missionary wanted to make sure the water was warm. It was not but Shelly had a great Day.

Home made Hambuger Buns
Ingredients:
1. 1 1/3 cups of water
2. 2 tablespoons-fat milk powder
3. 4 cup of bread flour
4. 2 tablespoons shortening ( I use butter)
5. 2 1/2 to 3 tablespoons sugar
6. 2 teaspoons salt.
7. 1 packet of yeast. (about 2 1/2 teaspoons)
Preparation:
Add to your bread machine in the order given and set on "dough" cycle. When cycle finishes, turn out onto a floured board and punch down.
Knead 4 or 5 times; and a little more flour as you knead if necessary to keep it from sticking. Press dough into circles and cut 8 even wedges; form each wedge into a ball the flatten into a smooth and fairly even circle. Place each circle on the baking sheet and let rest for 20 minutes. Bake a t 375 for about 18 minutes or until nicely browned.
Makes 8 Buns.

Slow Cooked Balsamic Glazed Carrots
I have another goal, Erik bought me this three crock-pot that is all in one unit so every Sunday I will use all three. Yesterday Feb 12, 20012 I did it. First was Scallop Potatoes, then The glaze carrots and for the last one I made rice pudding.
So Here is the recipe for the Glazed Carrots. Tasted great. Very easy too.
1. 1 pound baby carrots
2. 1 onion diced.
3. 1 tablespoon brown sugar.
4. 2 tablespoon olive oil.
5. 2 tablespoon Balsamic vinegar. ( do not use regular vinegar).
6. 1 teaspoon salt.
7. 1/2 teaspoon ground pepper.
Combine all ingredients and place in a slow cooker. Turn on low and cook for 3-4 hours. ( The cooking time will very depending on how you like your carrots cooked.)
